Augut 2009 - Australian Government Report on Meat Marketing

http://aph.gov.au/senate/committee/rrat_ctte/meat_marketing/report/index.htm

Some key issues to come from the enquiry are listed below. For the full report click the link above.

......"Major meat processors in Australia estimate that around 30 to 40 per cent of the beef sold domestically is from cattle with eight teeth, and much of this ends up at the butchers or supermarket as 'prime cuts' when it should be labelled 'budget' beef'......

..."It should also be noted that MSA grading focuses on the better quality end of the market. Much of the beef sold into the domestic market would not fit into their grading categories..........that 'the equivalent of' 3 million cattle are eaten in the domestic market each year' and that 65 per cent of Australian beef is exported. ....'less than five per cent of the beef sold for the domestic market in Australia is MSA graded'.

"Almost 40% of the beef retailed in Australia is sold by retailers who are not signatories to the voluntary Retail Truth-in-Labelling Agreement and there are unsubstantiated claims that beef labelled by abattoirs as "Budget" and "Manufacturing" are retailed in the domestic market under "Steer" or "Premium" labels and that cow beef is also traded at the wholesale level under "Steer Beef" lab

  Aus Meat Marbling Standards
The AUS-MEAT marbling system provides an indication of the amount of marbling in beef. Marbling is unsaturated fat that is deposited between muscle fibers. This is what gives meat its tenderness and flavour. Marbling is assessed and scored against the AUS-MEAT marbling reference standards.
